Yep. You're looking at a classic Chemex 10-cup brewer, with a wooden collar and (nice) leather strap. A coffee maker that never disappoints you.

Simple function and visual elegance combine to brew full-bodied and flavorful coffee. In combination with the coarse Chemex paper filters, you will experience a new type of coffee taste that is softer and fruitier.

YOUR CHEMEX CHECKLIST

To brew, you need your Chemex, accompanying paper filter for 6-10 cups (for best results), a digital scale and a timer.

  • Weigh out 50g of coffee
  • Find your grind preference, medium to coarse
  • Pour in 750g of hot water, temperature around 94-96°
  • Brewing time is only 4 minutes

THIS IS HOW IT HAPPENS
(Of course feel free to change the recipe to match your perfect coffee)

  1. Rinse the filter with hot water and heat the serving jug at the same time. Remove the water.
  2. Weigh the coffee and grind it medium to coarse.
  3. Place your Chemex on a scale, add coffee, level the surface and zero the scale.
  4. Fill the pitcher with hot water.
  5. Start the timer and start the bloom. You need to pour 75g of water in 30-50 seconds, starting in the middle and working your way outwards in a circular motion.
  6. Add 675g of water at a slightly more brisk pace, still in a circular motion - avoid the edges. Adjust the pace if necessary, the coffee and water bed should be about a centimeter from the upper edge of the brewer.
  7. Brewing should take approx. 4 minutes. Remove the filter - serve!
BREWING TIPS
  • When you place the paper filter in your Chemex, the tri-ply side should face the spout. After you rinse the filter, pour the water out on the opposite side of the spout. Double-check that the filter sits flush against the edges, without air pockets.
  • Check for dark spots on the surface as you pour. Aim for these spots to make sure all the coffee is properly soaked. When this is achieved, pour further into the center to continue stirring the mass.
  • Adjust the grind to something coarser if your coffee is too strong and/or bitter. Adjust instead to more finely ground if the coffee is too weak and/or acidic. Experiment - go wild!
